His artistic flair and excellent management skills have proven to be a winning combination here at The Petersham Restaurant.

Originally classically trained in French cooking techniques, Jean-Didier Gouges enthusiastically experiments with flavours, texture and colour. His modern and imaginative approach is influenced by a deep knowledge of many types of cuisine: Japanese (trained at Nobu), Pan Asian, Classical & Modern French, Modern British and Mediterranean.
